Porcini Mushroom Risotto, Truffle Pesto and Spicy Chilli Peppers

Ingridients

  1. 320 Gr CARNAROLI RICE
  2. 50 Gr DRIED PORCINI
  3. 90 Gr TRUFFLE PESTO
  4. 80 Gr GRATED PARMESAN
  5. 10 Tbsps EVO OIL
  6. 3 Tsps CHOPPED CHILLI
  7. 1/2 Glass WHITE WINE
  8. 1/2 ONION
  9. SALT
  10. PEPPER

Description

Porcini mushroom and truffle risotto is a super refined, tasty, tasty first course and ideal for holidays. Risotto of Italian excellence, it is a dish that the whole world envies us. Preparation

  1. Soak the dried mushrooms in warm water, leave them to soak for at least half an hour and then drain and squeeze them and cut them into small pieces. Make sure to keep the soaking water!
  2. Ina large pan, pour the chopped onion and a drizzle of oil and brown for 1 minute over low heat, add the porcini mushrooms previously soaked.
  3. Brown everything for 2/3 minutes, blending with white wine.
  4. Add the rice, mix well and after a minute add little by little the soaking water of the mushrooms filtered through a sieve and cook until completely absorbed for the time indicated in the package . (if that’s not enough, add water) and season with salt, cook with the lid on over low heat, stirring occasionally.
  5. A couple of minutes before the end of cooking, add truffle pesto sauce, chopped chilli peppers and parmesan cheese, mix everything well.
  6. Serve and add a drizzle of Extra virgin oilive oil.
