Pizza Marinara "Pride of Neapolitan Sailors"

Ingridients

FOR THE BASE

  • 190 Gr FLOUR
  • 100 Ml WATER
  • 1 Tbsp EVO OIL

  • 340 Gr TOMATO PULP
  • 1  CLOVE of GARLIC
  • 4 ANCHOVIES FILLETS
  • 1 PINCH of CRUMBLED OREGANO
  • 1 Tbsp EVO OIL

Description

One of the pizzas of the Italian pizzaiola tradition, one of the most popular, imitated and baked, in Italy and abroad. The marinara pizza is a very light pizza: topped with tomato sauce, oil, garlic and oregano. It is one of the easiest ways to make pizza!

Preparation

  1. Sift the flour into a bowl.
  2. Add the water, oil and salt. Start kneading, then transfer the mixture onto a pastry board and continue to knead until you get a smooth and homogeneous mixture.
  3. Wrap it in a sheet of cling film and let it rest for an hour.
  4. After the resting time, roll out the dough with your hands on a sheet of lightly floured baking paper to a very thin thickness.
  5. Then spread the tomato pulp over it.
  6. Spread the peeled and thinly sliced ​​clove of garlic on the surface of the pizza, along with the 4 well-drained anchovy fillets in oil. Sprinkle with the crumbled dried oregano and season with extra virgin olive oil, pouring it slowly.
  7. Put in the oven preheated to 200 degrees and let it cook for 15 minutes.
  8. Remove the pizza from the oven and transfer it to a large plate and serve immediately on the table.

Does the name “pizza marinara” make you think of summer and the sea? Right intuition. The origin of pizza alla marinara are to be traced back to the first half of the 1700s, can be found in its name. In fact, sailors used to make and prefer this pizza because the ingredients were easy to find and long-lasting. Detail not to be forgotten: the marinara is also very cheap, its ingredients are typical of our Mediterranean diet and affordable for all budgets.

It is said that a pizza chef from the port of Naples, tired of the complaints of the sailors who ordered him to season it “Nsapuroleva nu pocu”, decided to add something that did not affect the price but would improve the flavor. So it was the “sea ham”, anchovies and that fresh garlic, cut into small pieces, made them appearance. Not a fish-based pizza, but in fact dedicated one to the poor lunches of Neapolitan sailors.
